1/20/26 Mary’s Smoked Salsa
Nothing like Fresh ground salsa
This smoked salsa recipe started as a blend of trying to match favorite local restaurant flavors: Uncle Julio’s & Pappasito’s. Putting what we liked most about our experiments together. The real magic happens when the smoker hits those fresh vegetables, topped off with plenty of fresh Cilantro.
Grab you a great quality tortilla chip, something cold to drink, because you are going to need it. The sweats will start, but the addictive smokiness and kick will have you and your guests irresistibly dipping for more and more.
It stays well in the refrigerator for about two weeks keeping it in an air sealed container.

This recipe comes from Mary Jean Dickey Barker, my husband’s mothers’ mother. She remembered her mother making it in 1951, her first grade year.
Bringing back the nostalgia of canned spaghetti, hamburger meat, and onion with creamy Velveeta cheese. A little ketchup adds a tangy sweetness. It is cheesy, beefy slightly sweet, bit of tang. A great comfort dish that is perfect for a cozy meal or a fun family dinner.

This recipe as told from Charles Dickey Barker to Laura Jeanne Semar in San Antonio TX, sometime in the 1980’s. The base for this recipe is a non-flavored original BBQ Charles used Kraft Original BBQ sauce. Onion and jalapenos cooked down until sweet and fragrant, then pureed. This BBQ sauce has a splash of beer for depth and a hint of malty richness. The smooth purée adds a lively kick, giving the sauce a warm, lingering heat without overpowering the smoky sweetness.
